Authentic Chicken Tikka Masala at Home

Yogurt and spice marinated chicken thighs broiled until charred, then folded into a tomato, butter and cream sauce built on bloomed whole spices. Serves 4 with rice or naan.

Ingredients

First marinade

  • 900 g boneless skinless chicken thighs, about 2 lb, cut into 1.5-inch pieces
  • 2 tbsp lemon juice
  • 1.5 tsp fine salt
  • 1.5 tsp Kashmiri chile powder, or 1 tsp paprika plus 0.25 tsp cayenne
  • 0.5 tsp ground turmeric

Second marinade

  • 200 g full-fat Greek yogurt, about 0.75 cup, thick and strained
  • 5 cloves garlic, finely grated
  • 1 tbsp fresh ginger, finely grated, about a 1.5-inch piece
  • 2 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tbsp chickpea flour, besan, keeps the yogurt from splitting on the meat (optional)
  • 2 tbsp neutral oil

For the masala sauce

  • 3 tbsp ghee, or 2 tbsp butter plus 1 tbsp oil
  • 4 whole green cardamom pods, lightly crushed
  • 1 whole cinnamon stick, 2-inch piece
  • 1 tsp cumin seeds
  • 1 large yellow onion, about 250 g, finely diced
  • 4 cloves garlic, finely grated, for the sauce
  • 1 tbsp fresh ginger, finely grated, for the sauce
  • 2 tbsp tomato paste
  • 2 tsp Kashmiri chile powder, for color and mild heat
  • 1.5 tsp ground coriander, for the sauce
  • 800 g canned whole peeled tomatoes, one 28-oz can, crushed by hand
  • 240 ml water, 1 cup, plus more to loosen
  • 1.25 tsp fine salt, for the sauce, plus more to taste
  • 1 tsp granulated sugar, balances acidic canned tomatoes
  • 40 g unsalted butter, about 3 tbsp, cold and cubed
  • 120 ml heavy cream, 0.5 cup, at least 35 percent fat
  • 1 tsp garam masala, added at the end, not the start
  • 1 tsp dried fenugreek leaves, kasoori methi, crushed between your palms (optional)
  • 3 tbsp fresh cilantro, chopped, to finish

Method

    Toss the chicken pieces with the lemon juice, 1.5 tsp salt, 1.5 tsp Kashmiri chile powder and turmeric. Let it sit 15 minutes at room temperature. This first stage seasons the meat itself, which yogurt alone cannot do.

    Stir together the yogurt, grated garlic, ginger, garam masala, cumin, coriander, chickpea flour if using, and oil. It should be thick, like soft frosting. Fold it into the chicken until every piece is coated, cover, and refrigerate at least 4 hours and up to 24. Do not skip below 4 hours; the acid and salt need time.

    Set an oven rack about 6 inches under the broiler and preheat the broiler to high for 10 minutes. Arrange the chicken in a single layer on a wire rack set in a foil-lined sheet pan, or thread it onto metal skewers. Space the pieces out, because crowded chicken steams instead of charring.

    Broil 8 to 10 minutes, then flip and broil 5 to 7 minutes more, until the edges are blackened in spots and an instant-read thermometer in the thickest piece reads 165°F (74°C). Some black is the point. Rest the chicken on the pan and save every drop of juice that collects.

    While the chicken cooks, heat the ghee in a heavy 4-quart pot over medium heat. Add the cardamom, cinnamon and cumin seeds and cook 45 seconds, until the cumin sizzles and smells toasted. Whole spices in hot fat is where the sauce gets its backbone.

    Add the onion and cook 8 to 10 minutes, stirring often, until deep golden at the edges. Pale onion means a thin sauce, so give it the full time.

    Add the garlic and ginger and cook 1 minute, until raw smell gone. Add the tomato paste, Kashmiri chile powder and ground coriander and cook 2 minutes, stirring constantly, until the paste darkens to brick red and the fat separates slightly at the edges.

    Add the crushed tomatoes, water, 1.25 tsp salt and the sugar. Bring to a simmer, then cook uncovered 20 minutes at a lazy bubble, stirring occasionally, until it has reduced and thickened noticeably.

    Fish out the cinnamon stick and cardamom pods, then blend the sauce smooth with an immersion blender or in a countertop blender (vent the lid, hot liquid expands). Return it to the pot. A smooth sauce is what separates tikka masala from a chunky curry.

    Turn the heat to low. Whisk in the cold butter a few cubes at a time, then the cream. Keep it below a simmer from here on, because boiling cream in an acidic tomato sauce is the main way it curdles.

    Add the broiled chicken and all its resting juices. Stir in the final 1 tsp garam masala and the crushed fenugreek leaves. Simmer very gently 5 minutes so the chicken picks up the sauce. Loosen with a splash of water if it is thicker than you want.

    Taste for salt and acid. Finish with cilantro and serve with basmati rice or naan. It tastes even better the next day, once the spices settle.

Chicken tikka masala is charred, yogurt-marinated chicken (the tikka) simmered briefly in a spiced tomato, butter and cream sauce (the masala). It is worth making at home because restaurant versions lean on food coloring and sugar, and yours will not have to. This version works because the two halves are cooked separately: the chicken goes under a screaming broiler until the edges blacken, and the sauce is built by blooming whole and ground spices in ghee before the tomatoes go in. That char is the flavor people think comes from cream. Total time is about 1 hour of active work plus at least 4 hours of marinating, it serves 4, and the difficulty is moderate.

Where the dish comes from, briefly

The origin is genuinely contested and worth knowing before anyone tells you what is authentic. One widely repeated account credits the Shish Mahal restaurant in Glasgow in the 1970s, where a chef is said to have loosened dry chicken tikka with a tin of tomato soup and cream for a customer. Others place it firmly in Punjabi cooking as a close cousin of butter chicken (murgh makhani), which was already being made in Delhi in the mid-20th century. Both stories point to the same technique: tandoori chicken plus a tomato and dairy sauce. What follows is the Punjabi-leaning version, because it tastes better.

The three things that decide the result

First, use chicken thighs. Breast dries out in the time it takes to get real char, and thigh meat stays juicy even slightly overcooked. Second, marinate in two stages: a quick rub of lemon, salt, chile and turmeric, then the thick yogurt and spice paste. The acid and salt season the meat, and the yogurt clings instead of sliding off. Third, cook the chicken separately and hard. If you poach raw chicken in the sauce you have made a decent curry, but you have not made tikka masala.

  • Make it vegan: swap chicken for 700 g pressed extra-firm tofu or two 15-oz cans of chickpeas, coconut yogurt in the marinade, oil for the ghee, and cashew or coconut cream for the dairy. Broil the tofu the same way.
  • Make it spicier: add 2 slit green chiles with the onion and finish with 0.5 tsp cayenne. Heat added at the start reads as warmth, heat added at the end reads as sharp.
  • Make it butter chicken: skip the broiling char, blend the sauce with 30 g cashews, and double the butter. Same family, softer edges.
  • Scale it up: the sauce doubles cleanly in a wide pot. The chicken does not, so broil it in two batches rather than crowding one pan.
  • Allergen note: this recipe contains dairy in both the marinade and the sauce. Cashew and coconut substitutions introduce tree nuts and coconut, and store-bought garam masala blends occasionally contain added anti-caking agents, so check labels if you are cooking for allergies.

Tips, storage and make-ahead

  • The most common mistake is crowding the sheet pan. Wet, steamed chicken cannot char, and the char is half the dish.
  • The second most common is boiling the sauce after the cream goes in. Keep it under a simmer, and add the cream off direct heat if your burner runs hot.
  • Doneness cue for the sauce: it should coat the back of a spoon and hold a line when you drag a finger through it. If it is watery, simmer it longer before the dairy, not after.
  • Make-ahead: the sauce keeps 4 days refrigerated or 3 months frozen, before the cream is added. Marinate the chicken the night before, then broil and combine in 25 minutes.
  • Storage: leftovers keep 3 to 4 days in the fridge in a sealed container. Cool them within 2 hours of cooking rather than leaving the pot out.
  • Reheating: warm gently on the stove with a splash of water or cream, stirring, until steaming hot throughout. Microwave reheating tends to make the chicken rubbery and can split the sauce.
  • Freezing the finished dish works but the cream can separate on thawing. Whisk in a spoonful of fresh cream while reheating and it comes back together.

What to serve with it

Basmati rice, cooked at a 1:1.5 ratio of rice to water after a 20-minute soak, is the default and the right one. Naan is better than rice for mopping. A cucumber and red onion salad with lemon cuts the richness, and plain yogurt on the side does the same job with less effort.
